Why do you let it dry for a few days before beginning the process?
Allow cuttings to dry for a few days before placing in a rooting medium. Calluses prevent rotting when the cutting is placed in a rooting medium.

Yes you can do it in water, but better result in soil.
Is that substrate mix the only recommended one? I was at a garden center and saw Asparagus plants but I have the seeds already. I asked the man what is the substrate for it and he gave me Natural Organic Peat Soil. Thanks for any incite into this!
Peat is the surface organic layer of a soil that consists of partially decomposed organic matter, derived mostly from plant material, which has accumulated under conditions of waterlogging, oxygen deficiency, high acidity and nutrient deficiency.
